Bavarian Pot Roast



5-6 pounds boneless chuck roast

2 tablespoons fat

2 cups water

1-1/2 cups beer

1 cup canned tomatoes or tomato sauce

1 tablespoon vinegar

2/3 cup chopped onion

2 tablespoons sugar

1 teaspoons salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1 large bay leaf



Heat the fat in a heavy skillet or Dutch oven and in it brown the meat evenly on all sides  Mix together remainingingredients and pour over meat.  Cover and simmer gently 3 to 3-1/2 hours, or until very tender. Strain broth and thicken if desired.
