Beef Parmesan


1-1/2 pounds round steak or chuck

1 egg

1/3 cup Parmesan cheese

1/3 cup bread crumbs

1/3 cup oil

1/2 cup chopped onion

1 teaspoon each salt and pepper

1/4 cup sugar

1 6-ounce can tomato paste

2 cups hot water

1/2 pound Mozzarella cheese, grated



Trim fat from meat into 6-8 pieces.   Place between wax paper and strike with bottom of a large pan to flatten them, or use a meat pounder.  Beat egg with a fork.  Mix Parmesan and bread crumbs.  Dip meat in egg, then in the bread mixture.  Brown meat in a skillet in the oil, then transfer to a 9x13 baking dish.  In oil remaining in skillet, saute onion until transparent.  Add salt and pepper, sugar, tomato paste, and water.  Boil 5 minutes and pour two-thirds of sauce over meat.  Cover with Mozzarella and top with remaining sauce.  Bake at 300*F for 1-1/2 hours.
