3 pounds beef sirloin tips

3 tablespoons shortening

1/2 cup chopped onion

1/4 cup chopped celery

1/4 cup chopped green pepper

1/4 teaspoons salt

1 teaspoon chopped parsley

1/2 teaspoon oregano

1/4 teaspoon garlic powder

1/2 teaspoon sweet basil

1/4 teaspoon chili powder

Dash nutmeg------

1 16-ounce can tomatoes

1 cup water

2 teaspoons gumbo file'

Hot cooked rice



Cut beef tips into 1-inch cubes.  Saute beef in shortening until it becomes a rich brown color.  Add onion, celery, and green pepper.  Cook over medium heat for 20 minutes; stir.  Add remaining seasonings except gumbo file'; cook for 15 minutes longer over low heat.  Then add tomatoes and water and simmer about 1 hour or until meat is tender.  Serve over rice.  Season with gumbo file'.
