Cranberry Crumble Bars
Cranberry Filling (recipe follows)
cup packed brown sugar
1/2 cup margarine, softened
1 1/2 cups quick-cooking or old fashioned oats
1 cup whole wheat
1/4 teaspoon salt
Make Cranberry Filling. Set aside.
Preheat oven to 400 degrees. Mix
brown sugar and margarine in a medium bowl. Stir in remaining ingredients until crumbly. Press half the crumbly mixture into
an ungreased 13x9x2 inch pan. Spread with filling. Top with remaining crumbly mixture; press lightly.
Bake for about 20 minutes or until light
brown. For bars, cut into 8 rows by 6 rows while still warm.
1/2 cup sugar
1/4 cup orange juice
2 cups cranberries
1 tablespoon grated orange peel
1/2 teaspoon cinnamon
Mix sugar, orange juice and water
in a 1 1/2 quart saucepan. heat to boiling. Stir in remaining ingredients. Cook over medium heat about 10 minutes, stirring
occasionally, until thickened; cool.
