2 cups all purpose flour
1/3 cup Coffee Rich
Creamy Filling (recipe follows)
Mix flour, margarine and Coffee Rich
with a spoon. Cover and refrigerate about one hour or until firm.
Preheat oven to 375 degrees. Roll
one-third of the dough at a time on a lightly floured surface to 1/8th inch thick. Keep remaining dough refrigerated until
ready to roll. Cut into desired shapes with cookie cutters. Generously cover a large piece of wax paper with sugar. Transfer
cookies to wax paper using a spatula. Turn each cookie to coat both sides with sugar. Place on an ungreased cookie sheet.
Prick each cookie with a fork about 4 times.
Bake 7-9 minutes or just until set
but not brown. Remove from cookie sheet to a wire rack. Cool completely. Pair up cookies, spread about 1/2 teaspoon of Creamy
Filling on bottom cookie and form sandwiches.
3/4 cup powdered sugar
1 teaspoon vanilla, lemon or peppermint extract
food coloring, if desired
Mix all ingredients until smooth.
Add a few drops of water if necessary.
